2/23/2010 I'm Trying... I'm Trying... I'm Trying lot's of things. Mostly I'm trying to return to full on normalcy. After a week of on the go recovery, I'm ready for things to be blah and regular again. For a guy that has been trying to relax and take it easy without cutting too far into living life, I've probably failed pretty well. Part of the issue is just plain bothersome stuff, get past that and the bigger problem is that while I can be quite lazy, I also tend to be quite contrary... If I choose to waste the day doing little or nothing or better yet, things that I want to do that seem like little or nothing, that's fine, but tell me to do little or nothing, or suggest that I am overdoing it when I don't think that I am.... That's right, it makes me nutty... To top it off, the entry burn is healing nicely, but has this odd subcutaneous itch that I cannot satisfy to save my ass... But I'm trying... I'll try for another few weeks, adding 3 to 4 30min aerobic exercise sessions per week... I'll try... I'll try to keep up with this blog better... I'll try to post something 5 times a week at a minimum and hopefully more... I think I can... I think I can... 7/11/2009 I got my Google Voice Invite...4/26/2009 Interesting Saturday Evening... Last night, my niece accepted Communion for her first time. My wife and I, along with a bunch of extended family and friends attended the Mass. I'm not much of a church-goer, as I have issues with organized religion so I don't hear many homilies. For those not in the know, Homily is the part of Catholic Mass that is the Sermon, the part where they make the connection between the liturgy and you... The explanation of how the Bible pertains to you and today... Last night, we were treated to a Mass that was geared to the 8 year old kids that were to receive the Eucharist for the first time. Homily was about.... Simon Says.... The priest, who's name I failed to catch (he was referred to as Fr. Clown Wig because of his picked out Brady Perm 'fro") , tied it together and explained that Jesus is like Simon and you have to live your life by his teachings, ect... I may not agree with all of the Organized Religion stuff, but it was quite an interesting Homily..... 4/21/2009 Grilled Nachos As the weather warms we are all apt to cook outdoors and here's a nice snack that can be grilled up with minimal fuss and muss... Grilled Nachos By: Michael D. Peco Copyright 2006 Ingredients:
1 Bag Corn Tortilla Chips 1 Jar Salsa 1 Pkg Mexican Blend shredded cheese 1 Can Sliced Green Chilis; drained 1 Small Onion; diced Fresh Cilantro; chopped (optional) 4 to 8 ozs Sour Cream 1 Small Tomato, diced 1 Disposable Aluminum Cookie Sheet
Preheat grill if gas, if charcoal, this is best prepared following a meal when the coals have a slow even heat. This could also be done in the oven, but you will sacrafice the grilled flavor. Spray the Cookie sheet lightly with cooking spray. Arrange chips in a single layer on cookie sheet. Sprinkle with about half of the cheese. Sprikle chopped cilantro first to protect from burning, then proceed with onion, tomato and chilis. Sprinkle the remaining cheese over everything and place on a low grill; cover. Grill on low until cheese is melted and chips begin to brown slightly. Serve with Sour Cream and Salsa. This is one of the "endless possibility" recipes. You could add and subtract toppings to suit your taste, such as black beans, seasoned meat and chili come to mind. M~
